U.S./Europe Nutrition and Dietary Guidelines Reforms
Low Carb Denver, a health and nutrition conference, February 23-26, featured presentations by medical doctors, nutritionists, and nutritional biochemistry researchers. Most of the speakers were from the United States, and some of Europe, Australia, India, and Africa.
Most presentations shared the good news of successful nutritional therapy to resolve chronic health problems that research shows are metabolic in nature. Research and clinical experience were presented documenting the many ways dietary changes helped resolve health problems long thought chronic and irreversible. Most doctors presenting described their task as monitoring the process of de-prescribing medication as patients health improved.
Unfortunately U.S. and European Country public health systems and research are locked into theories and practices far less effective and based on limited, often weak research. Below are notes on selected speakers on the first day, with links to their work. (I will request access to videos and overheads of Low Carb Denver 2023 speakers for students and coaches researching US/Europe nutrition policy reform.)
• Bill Schindler, Executive Director, Eastern Shore Food Lab
Bill Schindler, PhD is the author of Eat Like a Human: Nourishing Foods and Ancient Ways of Cooking to Revolutionize Your Health and is an internationally known archaeologist, primitive technologist, and chef. He explores the role of technology in our ancestral dietary past by combining archaeological research and ethnographic fieldwork. He founded and directs the Eastern Shore Food Lab with a mission to preserve and revive ancestral dietary approaches to create a nourishing, ethical, and sustainable food system.
• Andreas Eenfeldt, Founder and CEO, Diet Doctor, Low Carb, Protein or Satiety for Metabolic Health?
Dr. Andreas Eenfeldt spent a decade as a family physician, treating patients with low-carb diets. He was amazed by their health improvements. To help empower more people, he founded the website Diet Doctor in 2007. In the last few years it has rapidly grown to become the world’s largest low-carb site, while staying free of ads, products or industry sponsorships. DietDoctor.com now has over 250,000 daily visitors and is available in three languages: English, Spanish and Swedish. The company has 20 full-time coworkers and over 20 freelancers, working to make low carb simple for patients and doctors.

• Chris Palmer, MD, Brain Energy: The Metabolic Theory of Mental Illness. Author of Brain Energy: A Revolutionary Breakthrough in Understanding Mental Health–and Improving Treatment for Anxiety, Depression, OCD, PTSD, and More
Objectives:
1. Describe the brain energy theory.
2. Outline many of the roles of mitochondria and how they connect the science of the mental health field.
3. Identify novel treatment strategies, such as the ketogenic diet, for serious mental disorders.
• Tro Kalayjian, DO, The Clinical Approach To Food Addiction, Dr. Tro’s Medical Weight Loss
Dr. Tro Kalayjian is a board certified physician practicing internal and obesity medicine, with a focus on diabetes, hypertension and lipid management. His focus is on implementing lifestyle and dietary modifications whenever possible. Dr. Tro Kalayjian, himself, has lost over 150lbs and has also worked with over countless patients with weight loss, diabetes, and hypertension through remote consultations via tele-medicine equipment and software.
• Amy Berger, Clinical Nutritionist, Tuit Nutrition, LLC, Optimizing Thyroid Hormones for Better Results on Low-Carb Diets
• Richard Johnson, Professor of Medicine, University of Colorado, A Biologic Switch that Drives Obesity, Diabetes, and other Common Diseases, author of Nature Wants Us to Be Fat,
Richard Johnson, MD is a physician and scientist whose primary interest has been on the causes of obesity and diabetes. Much of his work has been supported by the National Institutes of Health and has focused on sugar and especially on fructose, as well as one of the products of fructose metabolism, uric acid. He has published numerous papers (>500) and has lectured in over 40 countries. Recently he has published a book, Nature Wants Us to Be Fat that discusses much of his work and discoveries.
